Avocado, Melon and Fennel Salad with Mint
Avocado, Melon and Fennel Salad with Mint is a refreshing, elegantly simple dish that celebrates clean, bright flavors. Ingredients
For the dressing
- Olive oil 3 tablespoons
- White balsamic vinegar 1 tablespoon
- Freshly squeezed lemon juice 1 tablespoon
- Fine sea salt
- Ground pepper
For the salad
- Soft avocado, peeled and cut into thin wedges, 1
- Small fennel bulb, cored and very thinly sliced, 1
- Small Cantaloupe melon, peeled and cut into thin wedges, 1/2
- Fresh mint leaves, a small handful

Instructions
- For the dressing, whisk the olive oil, vinegar, and lemon juice and season with salt and pepper to taste.
- Arrange the avocado, fennel, and melon in layers in a wide bowl. Drizzle with the dressing and sprinkle with mint leaves and serve immediately.
