Arugula, Fennel & Grapefruit, Avocado salad
An arugula, fennel, grapefruit, and avocado salad is a vibrant, refreshing dish that balances a variety of flavors and textures. This type of salad is especially popular in winter.The flavor profile of this salad can be enhanced with additional ingredients, such as cheese, nuts & herbs.

Ingredients
- 4 cups arugula leaves
- 1 small fennel bulb (or half of a large fennel bulb)
- 1 medium ruby red or pink grapefruit (segmented, keep the juice)
- 1 small ripe avocado
- 1 stalk of scallion (only the dark green section)
- 1/4 cup extra virgin olive oil
- Pinch of fine sea salt
- Pinch of freshly ground black pepper
INSTRUCTION
- Gather all your ingredients to have everything ready and within reach.Start by washing and thoroughly drying the arugula to remove any grit.Next, focus on the fennel bulb: cut off the stalks at the top, retain some of the feathery fronds for garnishing later, and slice off the tough root end.
- Cut the bulb in half lengthwise and then slice into thin strips.For the grapefruit, cut it into segments — known as suprèmes — ensuring there’s no peel, membrane, or white pith attached.Retain all juice released during the process, and squeeze the leftover core to extract additional juice for dressing.
- Using the retained grapefruit juice, whisk it thoroughly together with olive oil.
- Add salt and pepper to taste to form a simple and refreshing citrus dressing.
- This will be used to flavor the arugula base of the salad.
- Toss the washed and dried arugula, along with the sliced scallions, lightly in the prepared dressing to coat them evenly.
- Once dressed, divide the mixture evenly between four serving bowls or plates, providing a fresh and vibrant base for your salad.
- Take the prepared fennel slices, avocado segments, and grapefruit suprèmes, and arrange them artfully on top or around each serving of dressed arugula.
- Finish off each salad by garnishing with finely chopped fennel fronds,These fronds will add both a pleasing visual touch and a hint of extra flavor.
