Ingredients
- 2 medium sweet potatoes, peeled and sliced into 1/4-inch thick rounds
- 1 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 4 oz log of goat cheese, softened slightly
- 2 tbsp honey, plus more for drizzling
- 1 tsp fresh thyme leaves, chopped
- Optional garnishes: toasted pecans or walnuts, balsamic glaze
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange sweet potato rounds in a single layer on the prepared baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss gently to coat.
- Roast for 15-20 minutes, flipping halfway through, until tender-crisp and lightly caramelized. Remove from oven and let cool slightly.
- While the sweet potatoes are roasting, combine the softened goat cheese, 2 tablespoons of honey, and chopped fresh thyme in a small bowl. Mix well until smooth and creamy.
- Once the sweet potato rounds are cool enough to handle, spread a small dollop of the goat cheese mixture onto each round. Arrange them on a serving platter.
- Drizzle lightly with additional honey just before serving.Garnish with toasted nuts or balsamic glaze if desired. Serve immediately.
