Ingredients

  • 1 large head of cauliflower
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons lemon juice
  • Salt – to taste
  • Pepper – to taste

Instructions

  • Preheat your oven to 425°F (220°C).
  • Remove the leaves from the cauliflower and trim the stem. Slice the cauliflower into 1-inch thick steaks.
  • Place the steaks on a baking sheet, drizzle with 2 tablespoons of olive oil, and season with salt and pepper.
  • Roast the cauliflower steaks for 25-30 minutes, flipping halfway through.
  • In a small bowl, mix minced garlic, parsley, thyme, lemon juice, and the remaining tablespoon of olive oil to make the garlic herb sauce.
  • Once roasted, drizzle the garlic herb sauce over the steaks and serve warm.
