For an English-style aperitif or afternoon tea, mini sandwiches are a must! A simple yet sophisticated finger food made with crisp cucumber, soft white bread, and a hint of butter or cream cheese. Perfect for brunches, garden parties, or bridal showers.

Ingredients


  • 200 g of fresh goat cheese (Petit Billy, Chavroux, Vrai type)
  • 8 slices of sandwich bread
  • 1 cucumber
  • 1 bunch of chives
  • salt and pepper

Instructions


  • Peel the cucumber. Cut it in half lengthwise to remove the seeds, then slice it very thinly. Place them in a foot-operated colander, season with coarse salt, mix, and let drain for 30 minutes.
  • Meanwhile, chop the chives and remove the crust from the bread slices. In a bowl, mix the goat cheese with half of the chives, salt, and pepper.
  • Rinse the cucumber slices thoroughly in fresh water, drain them, and squeeze them in a cloth to remove the water. Spread the chive cheese generously on the bread slices (reserve a little of the mixture for decoration).
  • Divide the cucumber slices. Close the sandwiches, pressing lightly with the palm of your hand to make them stick together. Cut the sandwiches in half. Place the remaining chopped chives on a small plate.
  • Spread the remaining cheese around the edges of the sandwiches and place it on the plate to "stick" the chives in place. Cover with plastic wrap and refrigerate until ready to serve.
